Description

This single serve peach cobbler is a fast, cozy dessert made with fresh or canned peaches and a buttery biscuit-style topping. Perfect when you want a little something sweet without leftovers.


Ingredients

1 medium peach (or ½ cup canned/frozen, drained)

1 tbsp granulated sugar (for peaches)

¼ tsp lemon juice

⅛ tsp cinnamon

1 tbsp melted butter

3 tbsp all-purpose flour

1 tbsp granulated sugar (for batter)

¼ tsp baking powder

Pinch of salt

2 tbsp milk


Instructions

1. Preheat oven to 350°F.

2. Toss peaches with sugar, lemon juice, and cinnamon.

3. Whisk together flour, baking powder, salt, and sugar.

4. Stir in milk until just combined.

5. Pour melted butter into ramekin.

6. Spoon batter over butter (do not stir).

7. Top with peach mixture (do not mix).

8. Bake for 25–30 minutes until golden and bubbling.

9. Serve warm with optional ice cream.

Notes

Use canned peaches for convenience but drain them well. Try adding nutmeg or topping with coarse sugar for extra crunch.
